I suspect much noise due to this location would be unlikely - maybe some awareness  during regular dining hours but probably not during any hours when you wanted more quiet. Main dining rooms are pretty sedate, unlike bing over the entertainment stage.

 

Being under the galley prep areas is a greater concern since they start working much earlier , cleanup clatters and bangs, and carts roll over hard surface flooring, 

 

There is quite an ocean roar on any of the aft decks, closer to the water the noisier it is, but that is the sound of the ship at sea churning its way on to its next destination.  Ships are like little  cities that never sleep. Something is always in motion somewhere.
