Assuming one could get the the port, what is the latest one can book a cruise?

Well... a manifest has to be turned in several hours I think before sailing.

Just for fun, I tried to faux-book the Feb 24th sailing. Here is the error message:
"Reservations are not available online within 8 days of sailings. Please Contact Resevations or your Travel Agent to book this voyage."

So, this doesn't answer your question, but it looks like you can book an available cruise up until ~8 days before embarkation. After that, it also looks possible but only via a TA or O-rep. I'll be interested to see if anyone has an answer since "planning ahead" means 3 months to me (actually, that's "planning way in advance").
