What nights are kids club dinner nights andwhat night is Carribean night?

The actual nights vary from ship to ship. For a 7 night cruise, you can expect to have kids dinners on both formal nights and generally one other. As for Caribbean night, it really depends on the ship and itinerary.

Most of the kids night dinners are on formal nights and usually they have a sign up sheet a day or two before.

As best I can recall (5 cruises with kids - 4 on Voyager-class and 1 on Radiance) we have never had an Adventure Ocean dinner on Caribbean Night -- the reason this sticks out in my mind is because Caribbean Night is also the night that the kids do the Pirate Parade...
