Hello looking for options of things to do there. Also any good excursions? Is it warm enough to go to the beach in late October? I also heard taxis can be a rip off. What are the going rates.

Limassol is all about beaches and close to vineyards, however it is well located for exploration of some of S. Cyprus so your options are many and varied..  You could go inland and tour some of the countryside and more traditional villages, or to the Troodos Mountains, or to Paphos where there are some splendid mosaics to be viewed in this popular and attractive town, or closer to Limassol, you could visit Curium or Kolossi. And should you want something completely different, Nicosia, the really quite famous divided city would also be doable within your port timings. Whichever options you choose will be determined by your personal interests but Cyprus offers something for everyone..

Did you look at which shorex are being offered even should you not want to actually book one?  They give an indication of the highlights of the area and what might be possible.  and of course the usual Tourist Information websites, plus Tripadvisor, Frommer's, Fodors, YouTube, Rick Steves and anything else which appears when you Google  Limassol(or Cyprus) Tourist Information or similar.

I would be astonished if every single taxi ride on Cyprus  is a rip off.  Granted many taxi drivers around the world will try to increase your fare by going the long way around, or charge night rates in daytime or whatever, but surely it is unlikely that ALL Cypriot taxi drivers are "rip offs"? so perhaps you heard incorrectly and it only applies to a small number?

You should be able to find taxi companies and pricing online, but you would first need to decide whjere you are going.  Google is your best friend.

You could also consider local tours or public transport, all of which will be online.  or consider a private tour.  Should you organise one you may be able to find others from your Roll Call to share with you, or if your Roll Call is quite active you may find others have already made arrangements and are looking for folks like yourself to join their small tours.

I think you are actually quite fortunate to have the opportunity to visit S. Cyprus as not too many ships spend time there.  Swimming at the end of October I know nothing about.

only a small number of past threads reference Limassol, so if you have not already searched for them and read some, choose from these

Was starting our research and we are ALL ABOUT BEACHES.  Do you have a recommendation from the port? Nice sandy beach?

Sorry, not into beaches, more into culture, history,  sights which are unique to Cyprus, not beaches which can be found anywhere in the world.  Cyprus has many many beaches all  around the island.

All you need do is google something like "Limassol beaches" or similar if you have not already done so and you will probably be spoiled for choice. After choosing whichever appeals most to you, google to find how to get there.
