Reservations for Sabitinis?

On the Sapphire Princess in September, we called the concierge on our first day on to make reservations for 2 for the 2nd night of the cruise at 6 pm. (It was not a formal night). We had no problem getting a table; in fact, we saw a number of parties walk up that evening from 6 to 7 pm and ask if there were tables available and get seated immediately. Around 8 pm, there was a bit of a line outside (8-10 people) and these were people with reservations. I have heard that if you want to eat at Sabbatini's on a formal night, you should definitely have reservations.
