Tours of Quebec

We are going to be in Quebec this August and are interested in finding anyone who offers good private tours. Looking for something that goes out to the falls, visits a maple sugar shack, so we can see how maple syrup is made, possibly St. Anne and old Quebec. I have received so many wonderful recommendations from this board on so many of our trips that I know the best recommendations come from here and I'm hoping someone can help me out. The tour is similar to the ships Best of Quebec and Countryside but we prefer smaller, personal tours. Appreciate any help you can give me.
