Hump cabins are the balcony cabins around the center elevators on decks 7, 8, 9, and 10 on Brilliance of the Seas. If you look at the deck plans on RCCL.com, you'll notice that it sort of bumps out around the Centrum elevators - that is why it is referred to as a hump. These are preferable because many of the balconies (the balcony not the cabin itself) are larger than other side balconies in the same category, plus they tend to be more private since other people can't see into them.
