How Many Formal Nights?

My husband and I are taking our honeymoon on the Empress in December. I've seen different information posted about the number of formal nights - some say 2, some say 3. It's an 11-night Southern Caribbean cruise.

 

Can someone clarify?

 

Also, our flight home from San Juan to Vancouver, Canada leaves at 11:05am. The ship docks at 7am. Is this enough time? It was booked through RCI's air arrangements, so I'm assuming they wouldn't put us on there if we couldn't reasonably make the flight.

My 11 day has 2 formal nights, and you will be the first ones off the ship because of your early flight. During to the first couple of days I would go to the purser's desk to make sure they have the correct info so you get the correct color luggage tags.
