Stingray City for an eighty year old?

I personally think she would. Even if she doesn't get in the water, it's an amazing sight. The second time we did a tour with Captain Marvin's, there was an elderly couple who never got off the boat. They just took pictures and enjoyed the excursion.

 

The boats that CM's uses are easy to get on and off. There's also a platform that runs the width of the boat (that some sat on rather than getting in the water). But if your mom is in good health, she'll probably want to get off and enjoy the stingrays.
