What should be my first Carnival Cruise?

I knew sooner or later I would get the urge to try Carnival. Price-wise, Carnival is very attractive. Here's my question:

What ship should I consider? I know this is a loaded question. Let me briefly tell you what I like from a ship. I have cruised mainly Celebrity, Royal Caribbean and Norwegian. I know that Carnival has it own unique style and we aren't looking for a substitute of those cruise lines. We want a true Carnival experience. Right now, I am looking at the Destiny, Valor, Glory or Liberty.

So..

I would like to find a Carnival ship that has a WOW factor. Good food and service. Nice cabins. We tend to prefer a newer ship where there isn't much wear and tear yet.

Secondary is the itinerary. We want a Caribbean cruise though. We just want a nice mix of ports and sea days.

Also, when is the best time when there is less children. We are thinking September or October 2007. A 7 day cruise. We also like a ship with a nice quiet bar for cocktails before and after dinner. We are your basic, hang by the pool, cocktails and casino and a show type of cruisers. We aren't into contests, karoke and activities. I am on vacation...I want to relax!

Ok..all your Carnival loyalists..ask yourself...what ship would make a Carnival convert out of me?

Any suggestions would be appreciated!

we sailed on the valor last year and had a great vacation. the services were excellent. i think you would have a great time on this ship and the ports were great. we went to st thomas, st marteen and nassau. i could do without nassau but the other two ports were nice.
