Need help picking out excursions....

My DH and I are booked for a CC New Year's Cruise to Cozumel, Belize, Costa Maya, and Nassau.

 

I am an avid <amateur> photographer, and we both like to snorkel.... so our mission in excursions is to find fund adventureous stuff that we can take pictures and at least once get in the water.

 

My DH and I are both adventureous 29 year olds and want to do stuff we can't do living in the mountain states. (We whitewater kayak, raft, and ski.)

 

For snorkeling, we are looking at the Shark Ray Alley/Caye Caulker tour from Coral Breeze in Belize. Is this the best way to go? Are there better things to do in Belize that are unique to Belize? (I am not to interested in doing the cave tubing floating trip, and I can go horseback riding anywhere;) )

 

Are there any other photo nuts out there that have some must take picture locations that will share?

I would LOVE to zipline, but my DH is afraid of heights!!! He almost gets sick everytime we go skiing!
