On the kayak excursion, does the boat flip?

Sure you can flip. The kayaks used by most tour groups are sea kayaks that you sit on top of instead of inside. Like any kayak, these can turn over. If they do, you simply fall off; you won't be hanging there upside down in an inverted kayak with your head underwater. If you have any semblance of good balance, you'll be fine as long as you're careful. My wife doesn't have the balance required to ride a bicycle, but she does fine on a kayak with me. Most of the rentals are two-person kayaks. Yes, there's room for a beach bag, but don't take anything you don't want to get wet. Ask the tour operators for a waterproof bag for you.
