Need help with time difference...

We will be in Grand Cayman in July and have an 11am excursion booked, their time (not through cruise co). My understanding is that Grand Cayman does not participate in daylight savings time this year, so wouldn't that make them an hour behind cruise ship time? Meaning, my 11am excursion would realy be @ noon.
