So, you can reserved whatever you wish and cancel up until the time printed in the Princess Patter onboard or online up until they close your booking about 5 days prior to your sailing. This is for 99.9% of shore excursions. Only a few I have ever seen can not be cancelled once booked, but those are for more exotic cruises such as overnites to Cairo in Egypt.
