Snorkeling, Grand Cayman

We're looking for an excursion in Grand Cayman to snorkel (Nov. 27 NCL Pearl) and spend a lot of time at reefs seeing beautiful coral and fish. We have already been to Stingray City and don't really care to see it again or be with that many people. Does any one have any suggestions. We've heard there is snorkeling off the beach, but prefer to go on a boat, again where there aren't as many people (with 3 ships ashore while we're there.) If needed, we'll go to Stingray as long as they also go to a great snorkel spot. When we went last time, the snorkel spot just wasn't that great. Thanks for any suggestions- I've searched and searched!
