Anyone cut rum cakes and the freeze in smaller portions?

Hi,

 

I have two rumcakes which I am treasuring. I don't think my family cares for them much so can I cut them and put in freezer bags and then freeze? I would hate to have to thaw out the entire cake for just myself. We have been back 3 weeks and I have not done anything with them yet.

I've not cut them up and put them in small bags, but I have tossed an open package (we ate part of the cake) into the freezer. I put it inside a ziplock freezer bag and when I took it out a month or so later, it was fine. Just try and make sure their is as little air in the bag as possible and I think it should be fine. :)

OK, I have to tell ya the truth!! I opened the coconut rum cake and it was a little smaller than I thought it would be and the other truth is....well, how do you say .....I think I am not going to have tooooo much trouble eating it:o ....I served it with vanilla ice cream and everybody in my family liked it:mad: , LOL..........they are really good. I hope you enjoyed yours as much as I did also!
