Getting excited for the Panama Canal cruise leaving on Nov 23rd! Any suggestions for shore excursions?

Kathy and I are on that voyage as well. Although we've cruised a lot, we've never been to any of these ports of call. There are no scheduled tours for two, San Juan Del Sur, Nicaragua and Huatulco, Mexico (as I recall they are no longer on the web site). Other ports of call include Cartagena, Colombia, San Blas Island, Panama, Acapulco, Mexico, and Puerto Vallarta, Mexico. We'd appreciate any recommendations you all may have.
