I'd also encourage you to visit the NCL board. Lots of information there about Freestyle cruising. To answer your question, NCL offers Freestyle cruising. There IS no formal night. Resort casual is appropriate attire every night in every dining room. There will be 1-2 "dress up if you wish" nights, and what percentage of people get dressier than resort casual varies a lot from week to week and itinerary to itinerary.
