We've caught sailfish in the middle of August, but then they begin to slack off. The only sport fish that aren't in abundance are Marlin, Sailfish and Mahi-Mahi, known more commonly here as "dorado", so there is descent fishing. I would take a "combination" deep sea and bottom fishing; when one isn't working often the other is. That way at least you get a shot at a better opportunity to catch some fish.
