Would appreciate some info on Belize excursions

My Mother and I are cruising on the Navigator of the Sea in early December. This is the third cruise we've taken together.

 

Mom is a spry 80 years old, but has no desire to partake in any of the excursions. Rather, at each port, I generally head out in the early morning for the excursion of my choice and arrive back at the boat in time to have lunch and spend the afternoon with Mom.

 

I'm excited to say that we are visiting Belize this trip. I've heard the snorkeling and diving are fantastic. Does anyone have a recommendation on the best excursion to take from the ship, or do they all pretty much end up at the same place doing the same thing? The four I am considering are: Barrier Reef Snuba, Catamaram Snorkeling at Rendezvous Caye, Reef Rocket Barrier Reef Snorkel and Barrier Reef Snorkel and Beach Break.

 

Also, any suggestions on where to go and what to see in town after lunch?
