You will need to consider things like: Does she need a cane or walker? How far / long can she walk at one time? That being the case, she should be able to do any of the ships excursions that are marked "Activity Level 1" and probably some of the "2s". Just look on the NCL website for excursions in your ports of call and set the "sort" criteria to "Activity Level" -- the results will group all of the ships excursions by the level, to make it easier to find them.
