How do you book Nachi Cocom?

I am new to all of this and from what I read Nachi Cocom is exactly what me and my family are looking for but I don't know where to book this at. Is this something that can be booked through the ship, we are sailing Carnival Estacy? Any advice will be appreciated.

They will send you an email back if there is space with a link that allows you to actually book reservations. You can't do it through your ship.

 

I was just there last week and it was a nice place to go to avoid the crowds. I also added the snorkeling.
