I have a long while till our cruise but, when should I call to start the process to redeem our points?

I have gotten my coupon in about 10 days, it then needs to get to RCCL, so I would call for them at least 30 days prior to final payment to be safe.

The coupons are only good for 6 months after you request them from MBNA, so I wouldn't request them earlier until you are 6 months or less from your cruise date. They will tell you it takes 8 weeks to get the coupons, but I've ordered them 6 different times and it's never taken more than 2 weeks.
