Panama Canal 21 day cruise in December

Would like to hear from those that have taken this Holland America 21 day cruise Round trip from Los Angeles, What are the key points to see and things to do while in the different ports:

 

Cabo San Lucas, Mexico

Acapulco, Mexico

Huatulco, Mexico

Puerto Chiapas, Mexico

Panama Canal (Balboa, Gutan Lake)

Puerto Caldera, Costa Rica

Corinto, Nicaraqua

Puerto Quetzal, Guatemala

Mazatlan, Mexico

 

We would also like to know if you can take a tender into Panama seeing that it will be in Gatun Lake from 2:00pm til 9:00am the next day, by looking at the web site it shows a tender is required but they show no excursions for the December cruise.
