  1. Here's the recipe - adjusted for smaller quantity. Lots of work - I keep intending to try it but never have gotten around to it.

     

    GoatCheese Souffle – Princess Cruises

     

    1 pint milk 1oz baked garlic puree

    1/2 lb goat cheese 8egg yolks

    1/2 pound butter (room temperature) 1/2lb flour

    salt and pepper to taste

     

    1 cup Gruyere cheese for sauce Butter for molds

    1/4 cup parmesan cheese to coat molds 2cups double cream (can use heavy cream)

     

    Instructions:

     

    Preheat oven to 375°. Butter six 3/4cup ramekins and dust with parmesan cheese.

    Place the milk into a heavy-bottom sauce pan, bring to a boil, and whisk in thebaked garlic. Allow to stand for 10 minutes. Mix butter and flour until aroux is formed. Whisk the roux into the milk/garlic and beat well over theheat, allow to cook out to a thick consistency. Add in the egg yolks and beat well, allow to cook out.

    Bring the pan to the side of the stove, add in the crumbled goat cheese, beatuntil dissolved and season lightly. Whipup the egg whites to a stiff peak and fold throughout the mixture retaining asmuch air as possible.

    Place the souffle mix into a piping bag and pipe into pre-buttered parmesancoated ramekin molds. Divide soufflémixture among ramekins and arrange in a large baking pan just large enough tohold them. Add enough hot water to baking pan to reach halfway up sides oframekins. Bake soufflés in middle of oven until slightly puffed and goldenbrown, about 20 minutes, and transfer to a rack.

    Let soufflés stand, uncovered, 30 minutes (soufflés will fall slightly).

    Lightly butter a baking sheet. Run a thin knife around edges of soufflés.Invert each soufflé onto palm of your hand and carefully put, right side up,onto baking sheet. Soufflés may be made up to this point 2 days ahead andchilled, covered.

    Increase temperature to 425°F.

    In a small saucepan bring cream with remaining teaspoon thyme and salt andpepper to taste to a boil. Remove pan from heat and keep cream warm, covered.Bake soufflés in middle of oven until slightly puffed and heated through, about5 minutes.

    Transfer soufflés to plates. Spoon 2 tablespoons cream over each soufflé.Princess serves with a decorative salad.

  2. Yeahhh im behind.. so to get caught up... I missed this one... I did origami with Jase the 2nd sea day afternoon. He’s from Australia and he has quite a fan club... which is likely why he mentioned his girlfriend... who works on the ship... a few times 😂. He told us how before joining Princess he went on safaris and adventures and knew nothing about crafts. He’s learned several on ships and enjoys teaching people and . This was a beginner class and we made a tray, a swan and a heart.. which I could likely remember how to do again👍

    Today is October 31 and we docked in Puerto Vallarta. I got up this morning still not knowing what I wanted to do 🤣. I went off the ship to ask what Tours were available. Keep in mind this was to be a RESTFUL trip so yeah, I decided ziplining and mule riding with hiking sounded great. It was with, a company I’d taken a tour with before and are well regarded. I forget the name, I’ll get it and share it. Short version is I was the only one on my tour at that time so it was me, two guides and a photog. The zip line part was 11 lines and was very strenuous. I made it with a few breaks. I have nerve damage in my legs that makes stepping up a lot hard... but I made it. After the mule ride, which my singing guides, I had time for lunch in at their beautiful ranch area. They are at the pier or you can reserve online.

    Onboard they have lots of Halloween themed movies, trivia and of course a party. A lot of the crew is dressed up as are many passengers. Several rooms are decorated and there are carved pumpkins in the piazza.

    Halloween night (pv night) was the twice baked soufflé night by the way.

    Ok, caught up! Today is Mazatlan day and 4 folks from the roll call met up with me and I showed them how to get to Stone island on the local ferry. It is about a 10-15 minute walk from the port to the ferry and a walk along the beach. You need to be pretty stable to get into the small 18 person boats as well. I believe the boats on the ship tours are more stable but if your mobility is fine it’s a great alternative. I know where the ship tour goes and so of course we chose another place. We are at El Velero which is pretty close to where you enter the beach from the water taxi. It has a beautiful trellis that provides shade and there are also loungers and umbrellas by the beach. I had a mango margarita which was 6USD, as well as a coke and chips with guacamole. There are beach vendors who come by a lot but saying no thank you is easy enough. There are places further down to rent kayaks or ride horses or the banana boat. It’s an easy and relaxing day. The water is amazing.

  4. We have been notified that our 11/4 cruise on the Ruby will have a Mexican Fiesta so I assume they will have the food to match. While this is somewhat expected on a Mexican Riviera cruise, this is a CA Coastal cruise. Considering where we live, it will be like home for us.

     

    Now if they have a German night in the HC we will have to reconsider that night where to dine. We have been to it before and loved it.

  5. Hello, we are sailing to Mexico on the Ruby in December and would like to try the afternoon tea. What is good and what isn't? I saw a youtube video and am very glad that the food is passed instead of pre-plated on a tray. I don't want to over eat so I just want to have 2 or 3 items.

  8. Hello, my BFF and I are planning a trip to Denali in late May 2020. We need to find:

     

    Where to rent a car in Anchorage?

     

    Where should we stay in the Denali area? We want a cabin type room with TV and views. We want it away from the road with preferably a small cafe/store. We'd love to stay somewhere near a creek or river. Total no more than $300.00/night

     

    Great places to eat? Breakfast, lunch and dinner?

    I got a great rate for a car rental at Enterprise for $125 for 4 days in Anchorage on 5th St. and a great place for lunch or dinner in Anchorage is Humpys.

     

    i did stay in Denali Bluffs about 3 years ago which was nice and had a view, a little restaurant and place to buy some snacky things. Next summer i am staying at Denali Perch which is actually about 15 miles outside of Denali proper so maybe near Healy because i am saving a ton of money (it is approximately $120/night) and may not be as updated as some others but seems nice and has decent reviews. i am trying to save where i can. In Denali in a little strip type shopping thing across from Denali is Prospectors Pizza and is a decent pizza joint for either lunch or dinner. You can pick up boxed lunch for traveling into Denali at several different places around locally so i would check on that. The Morino Grill is 1.5 miles outside of Denali and i know they have boxed lunches to take with you. Also inside Denali there is the Cabin Nite Dinner Theater and yes it is a little hoaky but i enjoyed it- it is a play about gold mining back in the old days in Alaska etc. with some singing and dancing and comedy. The dinner is chicken and ribs with sides etc and tea, coffee, etc. It's about $75 per person for adults and $37.50 for kids. It's worth it to me and something fun to do in the evening. Babies on lap are free.

  9. We've stayed at Healy Heights Cabins twice and really enjoyed the experience. The owners are lovely, friendly folks, the grounds are beautifully kept, and the cabins are cozy and clean. Try to book the smallest cabin (located by itself across the road from the property - sorry, don't recall the name of that specific cabin) with a deck overlooking the mountains and forest. That was our favorite - sitting in the window seat and looking out over the view after a long day on park shuttle is one of my favorite memories. Great value for the price, and we loved the location. Saw fox and moose daily as we left the ar

    ea to travel to DNP. Would highly recommend.
