Going on Joy on in a few weeks. Will I need Belize Dollars, Mexican Pesos and Honduran Lempiras or will they accept USD in these ports?

I was going to post a very similar thread to this but I'll just ask my question in here. I'm travelling on the Joy from Miami to Roatan, Harvest Caye, Cozumel and Costa Maya on March 16th. As far as I can tell, the entire Mexican state of Quintana Roo (which contains both Mexican ports) are on Eastern Time but don't observe DST which means they'll be an hour behind Miami by the time of this cruise. Also Belize and Honduras are both in Central time and don't have DST either so they'll be 2 hours behind Miami. What is NCL's policy on changing ship time to reflect local time?

I am confused about the $21 per day gratuity for FAS customers. Some posts seem to suggest UK cruisers like me (Who paid £149 to have FAS) don't need to pay this. But the cruise itself is in the US. Can anyone advise?

Going on a 7 night NCL cruise and have free at sea. Various personal situations mean it will be necessary for me to check my email every day or two. Is it possible to only use say 10-15 minutes per day and save the rest of the balance, or do you just get 150 minutes from the point you first login?
