Since FunShip Freddy was long ago discontinued as the CCL mascot and no longer sold as a plush toy, you will need to look for it on eBay or other secondhand sales sites like Bonanza. I found mine on Bonanza last fall.
When I sailed on Carnival Fascination in 2001, there was no FunShip Freddy (it came out in 2002, apparently). The mascot lasted until 2013 or so before retirement.
