We love Nohoch Kay https://costamayacruiseexcursions.com/excursion/costa-maya-beach-break/ its a gorgeous spot away from the busy areas and food and drinks were excellent there!

There are some cool jeep tours, we did one a few years back. https://cozumelcruiseexcursions.com/cozumel/cozumel-jeep-adventure-excursion/ you at least know that you have back up if something happens and they get you back to the ship on time, however you have to follow the tour group.

Personally I found Cabo safe. Im sure you and the kids will love it. The beach is beautiful and people are friendly. Just get out of the port area as they can be a little annoying trying to sell you tours and stuff so it can be a little overwhelming

For cabo, check with https://cabosanlucascruiseexcursions.com/ they have some great options. In PV we did a zipline tour which was great, I think it was Vallarta Adventures . In Mazilan we did a Salsa and Salsa tour through the ship, it was ok but nothing I'd do again

We did this ATV tour: https://costamayacruiseexcursions.com/excursion/costa-maya-atv-excursion/ a few years ago. Its a fun tour but if you are looking for a high end adrenaline ride, its not that:) . Its a great way to tour the town and down the sandy beach road that runs along the beach. We did get to go fast in parts but its fairly flat terrain and straight.

If you are looking for a nice resort with beach and pools, we loved our day at this resort https://cabosanlucascruiseexcursions.com/excursions/cabo-resort-beach-break-day-pass/ . There are two pools , one had a pool bar and was a little more on the adult side, but the other was quiet and the beach is lovely there too. Kids are free 5 and under as well.

We did this tour and we've also been on their other catamaran the Buccaneer and both were great tours. The crew was amazing and can't beat the catamaran. My daughter gets sea sick easily so we wanted a stable boat and this was perfect. Tons of room and sailing back was really nice.

We did an amazing stingray city and rum point tour for a family reunion a couple years ago and it was amazing! https://grandcaymancruiseexcursions.com/excursion/stingray-city-rum-point-private-charter-excursion/ Its a great boat with tons of space and its private so you get flexibility in how much time you spend at each location.

If you want to see McCaws and other wild animals close up , we did a tour in Roatan called Wild ON Wildlife tour our kids loved it as you got to hold many of the animals.
Belize is pretty hot and humid. You may want to look at a snorkeling tour or Altun Ha which is a shorter maya ruins tour.
From Cozumel, we once did a Tulum Ruins tour, but we had to take a ferry to the mainland but I think we had a lot of time. That tour did include a cenote stop as well, which was lovely and cooling after the Ruins

You can get the best prices on excursions if you book them on your own, rather than through the ship for sure.

Roatan we did the Wild On Roatan tour, really cool way to see the island and the wild life there. Again, the price was good there

We had a two day there as well but came back to the ship. I wished we could have stayed as we went to the Blue Marlin Ibizia at the Me for the Day Pass https://cabosanlucascruiseexcursions.com/excursions/cabo-resort-beach-break-day-pass/
It was a relaxing afternoon but in the late afternoon the DJ was amazing and the party just started when we had to leave. We met the manager and we could have stayed long then the set Resort Pass hours. Next time!!
