I have cruised on RCL, Princess, Celebrity and Disney both in the US and in Europe. The earliest departures are generally in the 7:00 to 7:30 a.m. range.

I am wondering the same thing. Looking at Google maps it seems there are many bike rental shops close to the port but not clear if it is within walking distance.
