I would not make any plans before confirming that with the cruise line. Call!
My friends will be cruising on the same ship in November and they arrive at 12 pm (at least that is what they told me)!!! I guess the scheduled changes from time to time.

JohninDC is right...rent a car and you can do whatever you like. I would definitely drive to Orlando and spend the day there. Traveling with kids? There are many places they will enjoy in Orlando: Disney Springs (free), Gatorland (low fee), Orlando Eye (i'm not sure it is the correct name) and many other places.
If you do not want to drive and can choose only one attraction you would like to visit - hire a transportation company that offers luggage storage. We use STAR TRANS VIP. I don't think they offer luggage storage for those interested in spending a day at KSC. But i'm sure there are companies that offer that.

StarTrans-VIP has 14 passenger vans (i think it fits 20 suitcases). They provide transfers from Orlando to the port. Do not know the rate. But if you are arriving 2 days before the cruise...maybe you should rent two vehicles and explore Orlando a bit.

I don't know if UBER falls under that or not in the US, but in Europe they get fined for transporting children without car seats. Several drivers in France, UK and Russia mentioned that after being fined they decided not to take passengers with kids (or have a car seat in their car at all times).
Someone mentioned that in Florida the parent can get fined instead of the taxi driver.
And i totally agree with JohninDC. Better safe than sorry!

I do not think you can predict that. It could arrive a bit earlier, but it might arrive later than scheduled too : )
I would definitely rent a car and go Orlando. I am not a fan of KSC and Cocoa Beach is not that exciting in December.

At the end of the page you will find: "The child restraint requirements imposed by this section do not apply to a chauffeur-driven taxi, limousine, sedan, van, bus, motor coach, or other passenger vehicle if the operator and the motor vehicle are hired and used for the transportation of persons for compensation."
BUT UBER is not a chauffeur-driven taxi. So by law you need car seats/boosters for kids under 6!
I don't think it is a problem. Most transportation companies offer car seats. Some charge extra and some do not.

Possible, but stressful. Both times i was super nervous, but everything worked out great. The first time we left the port at 7:45 am (self-assist) and arrived to the airport at 8:35 am. Second time we departed around 8:15 am (self-assist) and at 9:15 am we were at the airport (for 10:35 flight).
