Oh My oh My! What a lot of fuss about next to nothing.
When we went with Ramses, the price included all admission tickets, so I don't see how there was any funny play there. The price we were quoted is what we paid. The only extra anyone on our tour (14 people) had was the camel ride. They were very content to pay $15 had have the quide and driver there with them to make sure they got on and off the camels.
We were told in advance to have $US in cash and we did.

We went with Ramses in November and they consulted us before going. I did not want the Hard rock Cafe, but something Egyptian. We were taken to the Peace Cafe near the Museum. It was excellent. They had a hot and cold buffet. Our lunch was included in the price of our tour.

We had a half day in Cyprus in November. We hired Christours to pick us up (two groups of 14). We went to Paphos which has amazing mosaics, better than Herculaneum and the Terrace Houses in Ephesus in my opinion. We had a short stop on the way to see Aphrodite's Rock. We had a few minutes to shop for souvenirs in Phaphos. On the way back we went to Kourion to see the ampitheatre and more amazing mosaics. We were back to the ship in plenty of time.

When we booked with Ramses and subsequently went on the tour there was no mention of this. I had no interest in purchasing a cartourche so I did not query them. You could always ask them about this.

Check other roll calls to compare and negotiate. It seems that it is expected.

They suggested Hard Rock to me thinking I would be excited by this! I informed them otherwise immediately and they changed to a 'traditional Egyptian restaurant'.

You need to go to the Roll Call for your cruise to do this. Look for the roll calls on the opening page for Cruise critic boards.
Don't be afraid to try things on your own!
