Off the beaten path excursion suggestion?

Hi all,

 

One of the stops on our Miracle cruise in March is in St. Maarten, and we're looking for suggestions for more off the beaten track types of excursions. I don't want to book the ship excursions (hate stopping to let people pee and buy postcards 10 times a day), and we're not lay on the beach/shop/drink all day kind of folks.

 

Does anyone have any suggestions?
