Need Help Carnival Dream Formal Nights

Normally we do not care about which night is formal but we are with a group of friends new to Carnival and are planning on using the specialty restrauant(sorry on spelling) on an evening that is not formal night. We are doing the eastern cruise , St Thomas and St Maarten. Does anyone that has been on the dream know which nights are formal dining. Thanks so much.
