On board all prices will be in euros. I've never bought a wine package but I think you order it based on the price quoted in the catalog or website. Even if the quoted price is in Canadian dollars, at the end of the cruise when it's time to charge your credit card the total amount, including the wine package, will be in euros. The exchange rate at that time will be in effect, not the rate today.

As capricruiser says all onborad pricing and billing is in Euros.

 

if however you buy something before cruising (say wine or spa package) the you will pay for that in US$ assuming you are using a US TA, Not sure if MSC have a Canadian office or not. If they do, you may even be able to pay in Can$ for pre ordered things. I live in the UK and if I prepay for things before my cruise I pay in pounds sterling - which worked out much better for me with the strength of the Euro.
