hdawson Posted February 28, 2010 #4 Share Posted February 28, 2010 Skirt steak is pretty unknown in the US but is an excellent piece of beef. It's a pretty small portion of a cow. It is slow roasted pork that has been marinated in bitter orange juice and local spices, wraped in banana leaf and slow roasted underground on hot stones. The other day on of the nurses at work was telling me how much he liked Mexican food and then ask me if I wanted anything from Taco Bell.
