Go to any of the popular travel web sites (or Carnival's own site), and try to book a cruise for the week you're interested in. If you don't see cabins available for certain cabin categories, it's because there's none left. Then just close the browser before you get to the final confirmation step. Mine also keeps notes on cabins that he sells after getting feedback from his customers. Sometimes comes up with some nice inside information.
