The Island uses one big dining room for PC and the Diamond has four smaller ones. It's nice to have the smaller dining room feel, but it's really not anytime dining. You do have to make a reservation during popular times and they fill up fast. If you really like to dine when you feel the urge to eat - then the Island is so much better. If you like your table and wait staff, you can ask the Maitre D' to reserve it for you for the remainder of the cruise or you can walk in anytime you want without a reservation.
