Best Places to Snorkel/Kayak/Beach in the Adriatic & Mediterranean?

We are cruising on the August 20th voyage from Venice to Athens and are wondering if there are any good spots to snorkel in the Adriatic or off the coast of Greece? Or if not snorkeling, what about a place to kayak?

 

Also, any recommendations as to where the best beaches are? We are stopping in Rimini and Trieste, Dubrovnik, Corfu, Gythion and Athens.
