Yes, the partial transit will go through the Gatun locks. You can book an excursion that will take you all the way through to the Pacific locks too. You can also just stay on the ship for the transit back out (it'll be deserted since most people will be on excursions...).

Yes and yes. The 10 day partial does go through the locks, but you really need a full transit to experience the entire canal. It is much more than just the locks--the most challenging part of building the canal was digging the Culebra Cut. You can get the entire canal experience on a partial transit by taking the ocean to ocean excursion (a smaller boat takes you through to the Pacific side). I prefer doing the whole canal on the cruise ship, but the canal experience is great either way.
