Book C1 points for cruise next Feb. question

We are cruising next month for the first time. I want to book a cruise next year to use up my C1 points before 5/31. Wanted to book next February (Presidents Week) when the kids are out of school. It is best to book now, or to wait until I am on the ship. I have seem threads that you can get bonuses for booking another cruise while on one?

 

Any pointers on what to do and when? We will probably book 2 rooms, since we have 3 kids.
