Favorite activity on eastern caribbean route?

Sail on the FOS next week on eastern caribbean route. If there was just ONE activity you could do either on board or off the ship , what would it be? Relaxing doesn't count because we already plan on doing that and that is why we want to pick our activites carefully. We are first time cruisers.

I'm sure some will disagree and offer great excursion advice but I love to shop at the tent market in St. Thomas...and then to Coconuts for a Bushwacker and Conch Fritters....Enjoy !!!!
