I think you are referring to the wine pairing menu. If so, you get a choice of appetizer, soup, salad main course and dessert from a predetermined menu. Each course is paired with the appropriate wine. We have done this twice. The first time on the Connie was very enjoyable. On the Equinox they offered a choice of lamb or venison for the entree. Not caring for either we were told, before we ordered, that we could substitute another entree. We ordered lobster that was excellent. What they did not tell us was that they would not pair it with an appropriate wine. When we expressed our disappointment in this policy the matre'd reduced the cost of our meal which was appreciated.
