I know the liquor bottles available for purchase in advance of a cruise are 375ml, but what is the size bottle available for purchase at one of the onboard bars?

They don't allow you to purchase the bottles of liquor at the bars anymore. The largest bottle you can purchase (pre-cruise or during your voyage) is from room service and it is the 375 ML as you have already mentioned. :(
