llachance Posted February 1, 2011 #3 Share Posted February 1, 2011 Tiramisu Serves 6 ½ recipe vanilla sponge cake 1 cup hot water ½ cup sugar 1 Tbsp espresso powder 2 Tbsp Kahlua or coffee-flavored liqueur 24 lady fingers 2 egg yolks ¼ cup sugar 2 cups mascarpone chees 1 ¼ cup whipping cream whipped ½ cup Grand Marnier or orange-flavored liqueur 1 recipe Crème anglaise ¼ cup Kahlua or coffee flavored Ligueur Semi Sweet Chocolate Flakes 6 strawberry fans Heat oven to 350 degrees. Refer to vanilla sponge cake recipe I Chef’s Notes. Grease and flour 6x8 inch baking pan. Prepare ½ recipe vanilla sponge cake; pour batter into prepared pan. Bake 15 minutes or until wooden pick inserted in center comes out clean. Cool 5 minutes; remove from pan. Cool completely on wire rack. In small bowl combine water, sugar and espresso; stir until sugar and espresso are dissolved. Stir in Kahlua; cool. Place sponge cake and ladyfingers on wire rack; brush generously with syrup. Line 6x8 inch pan with parchment paper. In small bowl combine egg yolks and sugar; mix well. Add mascarpone cheese; stir with rubber spatula until well mixed. Fold whipped cream and Grand Marnier into mascarpone mixture. Spoon layer ½ inch thick in bottom of prepared pan. Place 8 soaked ladyfingers over mascarpone mixture. Repeat 2 times with remaining mascarpone mixture and ladyfingers. Fit soaked sponge cake over top final layer. Cover and refrigerate four hours. Prepare Crème anglaise as directed; stir in Kahlua. Chill. Unmold Tiramisu; cut into 6 portions. Sprinkle top with chocolate flakes. Serve with Kahlua sauce and strawberry fan. Chefs Notes: If 6x8 inch pan is unavailable a 5x9 inch pan can be used. llachance Posted February 1, 2011 #4 Share Posted February 1, 2011 1/2 cup sugar 4 eggs 1/4 tsp vanilla 1 1/4 cups sifted Cake Flour Heat over to 375 degrees. Grease and flour 6-inch round cake pan. In medium bowl combine sugar, eggs and vanilla. Place over warm water; whisk constantly until mixture reaches 110 degrees. Sugar will be completely dissolved. Remove from water bath. Continue whisking until very light and fluffy. Fold into sifted flour. Pour into prepared pan. Bake 25 minutes or until cake springs back when touched lightly in center. Cool on wire rack. From a Carnival promotional email: INGREDIENTS: • 2 fl. oz Grand Marnier • 8 oz sugar • 20 oz mascarpone cheese • 20 lady finger cookies • 10 egg yolks • 4 cups heavy cream • 3 fl. oz marsala wine FOR COFFEE SYRUP: • 2 fl. oz Kahlúa • 1 cup water • 2 oz sugar • 2 oz instant coffee powder TO PREPARE: • Got a double boiler? Use it to prepare a sabayon with yolks and sugar. Cream the mascarpone cheese and mix into the sabayon. Add the marsala, Grand Marnier and whipped cream — fold in the sabayon mixture and keep it in the fridge. • To make the syrup, dissolve the instant coffee in hot water, mix the sugar with Kahlúa and let it cool in the fridge. • Soak the lady fingers in the coffee syrup and arrange one layer of cookies on the bottom of the serving glass. • Using a piping bag, pipe the sabayon mixture into the cup, as shown in the picture. • Arrange an optional garnish - pictured above we've got chocolate ruffle, marbled chocolate flakes, cocoa, sugar rocks and marzipan coffee beans.
