According to the Princess website, the Provence dining room is for the Traditional diners while the Bordeaux is for those who chose the AnyTime dining option.
Correct. The Provence dining room on deck 6 is for Traditional (fixed seating) and the Bordeaux on deck 5 is for Anytime diners. The menus and dress code are exactly the same. Your cruise card will have which dining room you are to go to.
