Some are more gregarious than others and more sociable, but dining with pax is part of the job and not because they are dying to give up what would be free time to become part of your family. And yes, they provide nice wine for the table! If you want to be at one of those tables, have your TA request a table for 8 with an officer. It's not foolproof, but your odds are better. As for open seating, if you have made the acquaintance of a certain officer with whom you would like to dine, just ask him or her and make your reservations accordingly. Duty schedules may interfere.
