We never had a problem with US dollars, and we even stayed there a week for a land vacation. You may want to check with your tour operator on what they will accept. Ours (Captain Bryan's) won't do credit cards.

You can freely use US money with no problems everywhere on the Island. Many retail businesses that cater primaily to tourists (such as the duty free stores) mark their prices in USD, and often pay their local staff in USD. You will find however that most restaurant prices are in Cayman Islands dollars. The universal exchange rate for cash is 1 US dollar equals 80 cents Cayman. Generally, change is given in CI money. The primary reason is that it makes accurate conversion a snap. If an item is priced, say CI $14.35, if you hand over US$20, this is considered exactly as if you had given CI $16, and the change is therefore CI $1.65, no calculators necessary. For credit card and other non-cash transactions you get a slightly better rate of I US dollar equals 82 cents Cayman.
