When a ship overnights in port what are tender schedules?

We are sailing on Nautica Dubai- Capetown and this will be our first time overnighting in port . For those of you with experience, is there a protocol for tender schedules? How late do they run in the evening and how early do they begin in the morning?

If you are overnighting in port you very likely will be docked and usually you can leave and return whenever you wish.
