Oasis - Western - Best day to try specialty restaurant?

We are sailing on the Oasis, doing western ports. My DH and I have never done a specialty restaurant and would like to know the best day to make an appointment? All other days we will be in the MDR. Thank you very much.

We did a specialty dinner on the day we were in Cozumel since we were in port until 7pm and we really wanted to take advantage of the full day there. In order to make it to dinner in the MDR (1st seating) we would have had to head back to the ship by 4:30. Scheduled Giovanni's for 7:30 instead and it worked out very well.
