It seems that the One Way itins to Hawaii have two days in Honolulu either for embarking or disembark. Does this mean we board the day before departure or disembark the day after arrival and have a floating hotel while we explore the island?

Arrive in Honolulu on one day, stay overnight on the ship, disembark the next day. Embarkation is also on the next day

Yes that is basically it. The ship stays docked in Honolulu for an extra night and day at the beginning or end of the cruise depending on the itinerary so you have extra time to on Oahu without needing to stay at a hotel.
